Chocolate Mousse
Syrup for Dipping Cookies
- ½ cup (120 g) water
- 5 oz (140 g) sugar
- 1/3 cup (100 g) kirsch, rum or other alcohol to taste

Boil water and sugar and stir to completely dissolve sugar
Cool and when syrup is cold, add kirsch

While syrup cools, whip the very cold cream into a Chantilly
Melt chocolate with milk in a double boiler
Stir until chocolate is smooth Delicately blend chocolate into Chantilly cream with a spatula
Pour syrup into a soup bowl and soak cookies in syrup, then use them to line a pan closely together
Pour half the chocolate mousse into pan, top with a layer of lady fingers, pour over remaining chocolate mousse and cover with a layer of lady fingers
Chill for 12 hours
At serving time, turn out onto a serving platter, soaking mold in hot water to facilitate unmolding
