Ham and Mushroom Quiche

« A few days before the end of the summer vacation and I am already longing to eat mushrooms. Just to keep me going until fall, here is a really easy quiche recipe that will be perfect for a quick Sunday evening meal »

For 1 quiche


  • Remove the parsley leaves and chop finely
  • Wash/wipe the mushrooms clean. Chop them roughly
  • Peel and chop the shallots

To make the quiche base

  • Press the shortcrust pastry into a buttered flan dish
  • Brush the base of the pastry with egg yolk and use a fork to prick it with small holes
  • Place it in an oven preheated to 400°F (200°C) for 5-10 minutes to seal the base

To prepare the vegetables for your quiche

  • Heat the oil in a pan over a medium heat
  • Add the shallots and mushrooms
  • Sweat for 7-8 minutes until the mushrooms have released their juices
  • Stir regularly

To make the quiche filling

  • Break the eggs into a bowl
  • Add the cream
  • Stir well until the mixture has an even consistency and is slightly frothy
  • Add salt and pepper to suit

To cook the quiche

  • Put the mushrooms and shallots onto the prebaked pastry base
  • Sprinkle with chopped parsley
  • Add the ham, cut into strips
  • Cover with the cream and egg quiche mixture
  • Cook for 20-30 minutes in an oven preheated to 400°F (200°C)
  • Serve warm or cold, according to your preference


This is really a very simple recipe that enhances the delicious flavors of the mushrooms you have just gathered.
Some people like to add garlic. It is true that mushrooms are delicious with parsley and garlic, but this tends to obscure the taste of the mushrooms slightly.
Instead of the ham you could use smoked bacon, some nice ventrèche (French pancetta) or smoked ham. Or perhaps some nice smoked Ardennes ham?
