Chocolate Heart with Bitter Orange Marmalade

Serves 2

  • 1 packet butter cookies (“palets au beurre”)
  • 8 oz (250 g) bitter orange marmalade
  • 5½ oz (150 g) dark chocolate
  • ¼ cup (60 g) butter
  • 2/3 cup (15 cl) whole milk


To prepare the ingredients

  • Cut the chocolate into small pieces


  • Crush the cookies and place them in the bottom of some heart-shaped molds (or an ordinary mold)
  • Spread a thin layer of orange marmalade on top
  • Put them in the refrigerator
  • Bring the milk to the boil, add the pieces of chocolate and stir until the chocolate has melted. Stir in the butter
  • Mix all of the ingredients together well
  • Remove the molds from the refrigerator and pour the chocolate cream on top of the cookies
  • Leave to set for 2 hours in the refrigerator.


Presentation suggestion
Unmold the hearts
Decorate with fine strands of orange zest and chocolate shavings
Hints and tips
If you do not have any heart-shaped molds, you can use a cookie cutter to cut out heart-shaped pieces
To make the chocolate shavings, use a potato peeler or mandolin.
