Two salmon tartar

« This cold appetizer is probably one of the best ways to enjoy the full flavor of salmon. It is cool and light yet very refined. It will go well with your holiday menus and it won’t spoil your fun because it can be prepared in advance. »

Serves 4:

  • 21oz (600g) of fresh salmon
  • 7oz (200g) of smoked salmon
  • 1 chopped shallot
  • 1 tbsp chopped flat parsley
  • 1 tbsp chopped dill plus 1 sprig for decoration
  • 1 tbsp chopped chives
  • 1 lime
  • 3 tbsps olive oil
  • 2 leaves fresh basil
  • 2 large tomatoes
  • 4 tsps soy sauce
  • Pepper, salt


  • Remove skin from salmon and cut into small cubes
  • slices of smoked salmon into small pieces
  • Put salmon pieces in a salad bowl
  • Add chopped dill, parsley and chopped chives
  • Pour lime juice and olive oil over ingredients
  • Mix well
  • Salt and pepper
  • Cover salad bowl with plastic wrap and store in refrigerator for 1 hour

Finishing and presentation

  • Blanch (plunge tomatoes in boiling water for 1 minute then remove skin) tomatoes and cut into small cubes
  • Chop basil leaves and combine tomatoes with a dribble of olive oil
  • Arrange salmon mixture in the center of plates
  • Cover salmon with tomato cubes and basil and arrange some around circles
  • Pour 1 tsp of soy sauce on the plate around the composition
  • Unmold
  • Decorate with a tiny sprig of dill and a few crystals of cooking salt on the tomatoes


The tartar can also be served on a toasted slice of country bread or on warm blinis.
