Serves 4
Preparation
- Wash, peel and dice potatoes
- Peel, and coarsely chop onions
- Peel and mince garlic
- Melt butter in a pot over low heat
- Add onions and cook gently 7-8 minutes
- Stir onions well while cooking
- Sprinkle onions with flour and brown onions
- Remove ¼ of the onions and set aside
- Pour in stock
- Add potatoes and garlic
- Place over medium heat and bring to a boil
- Simmer 45 minutes
- Mix thoroughly
- Add the browned onions you set aside and the croutons
- Grate nutmeg, add salt and pepper to taste
- Cook another 2-3 minutes
- Serve hot with grated gruyere you can melt into the soup
SuggestionAs with the recipe for Lyonnaise Onion Soup Au Gratin, this soup is served with grated Gruyere or Emmenthal but here, it melts nicely into the hot soup instead of browning over bread in the oven.
