Serves 2:
- 12 large cooked pink shrimp
- 3 hearts of palm
- 1 tomato
- 1 avocado
- 1 thick slice of fresh pineapple
- ½ mango
- 2oz (50g) of raisins
- 2/3 oz (20g) de pine nuts
- ½ C (10cl) of cream
- 1tsp (4cl) of rum
- Juice of ½ lemon
- 1 tbsp of mustard
- Salt and pepper
Preparation
- Pour rum in bowl and add raisins
- Let raisins soak in rum during preparation time
Preparation of sauce:
- Cut avocado in 2 pieces
- Mash one half with a fork
- Add mustard, heavy cream and lemon juice to the mashed avocado
- Combine until sauce is very creamy
- Salt and pepper
- Finish by adding the other half of the avocado cut into small cubes
Preparation of the salad:
- Cut the mango, tomato, pineapple and hearts of palm into small cubes (diced)
- Put all into a salad bowl
- Add shelled shrimp
- Sprinkle coarsely chopped pine nuts over mixture
- Pour avocado sauce over mixture
- Add raisins that have marinated in rum
- Mix well and correct seasoning if needed.
SuggestionAn idea for presentation: when you have emptied the avocado halves, save the rind to serve the salad.
As for shrimp, that which is good with pink shrimp is also good with gambas, jumbo shrimp, scampi or jumbo prawns.
