Serves 4:
Preparation
- Boil salted water in a large pot
- Add tagliatelli and cook for 4-5 minutes until they are al dente
- Drain tagliatelli
- Return pot to heat
- Melt butter
- Add shallots and cook until tender for one minute
- Add cream and eggs and mix energetically while lowering heat
- Let mixture thicken for 3-4 minutes stirring continuously
- Pepper and add tagliatelli
- Mix for 1 minute
- Remove from heat and add smoked salmon cut into thin strips and sprinkle with chopped dill
- Salt if necessary
- Serve hot sprinkled with grated Parmesan cheese
SuggestionYou can garnish the dish with some salmon eggs and use linguini or broccoli pasta.
If you are adventuresome, try a splash of whisky in your cream sauce. Whisky goes very well with smoked salmon.
