Preparation of ingredients:
- Peel and cut the onions into very thin slices
- Cut the meat into thin slices as well
- Peel the sweet potatoes
Preparation:
- In a casserole or a large, thick-bottomed pot, heat the olive oil and 1 tablespoon of clarified butter; add all the spices and fry them
- Add the meat, salt, and mix together; add the yogurt
- Lightly brown the meat, then cover and allow to simmer over low heat until the meat is perfectly soft and tender
- In the meantime, cook the sweet potatoes in a pot of salted water
- Drain and mash the sweet potatoes, add 2 tablespoons of clarified butter, and check the seasoning
- Serve the lamb curry with the mashed sweet potatoes
