Fondue Savoyarde

« Unlike a Swiss fondue, a Savoyarde cheese fondue is a wonderful combination of three cheeses with very different characters. This is a very social meal that allows you to get together and chat with your friends without having to spend all your time in the kitchen. »

Ingredients

Serves 4


Utensils

  • A fondue dish (high-sided earthenware or cast-iron skillet) with a burner
    Fondue forks

Preparation

To make the fondue

  • Peel the garlic clove and rub it over the inside of the fondue dish
  • Grate the three cheeses after removing their rind
  • Put the grated cheese into the fondue dish, then add the white wine and nutmeg
  • Heat the fondue dish over a low heat, stirring until the cheese is completely melted
  • Add the Kirsch, and give it another good stir
  • Cut the bread into small cubes


Presentation

  • Light the burner and place the fondue dish on top in the middle of the table
  • Dip the cubes of bread in the melted cheese

Suggestion

I suggest you add a few fines herbes to the fondue by popping half a bunch of chopped chives into the cheese when you add the Kirsch.
