Moist Apple Tart with Almonds

Serves 4


  • ¼ cup (60 g) butter
  • 1/3 cup (35 g) icing sugar
  • ½ oz (15 g) ground almonds
  • 4/5 cup (100 g) flour
  • 1 egg
  • 2 apples
  • 1/3 cup (75 g) liquid whipping cream
  • ½ oz (15 g) flaked almonds


To make the dough

  • Cream the butter in a bowl, and then add the icing sugar, ground almonds and a quarter of the flour. Stir
  • Add the egg and the rest of the flour
  • Mix without working the dough too much
  • Cover the bowl and put it in the refrigerator for 6 hours

To make the cake


  • Preheat the oven to 350°F (180°C)
  • Peel and core the apples, and cut them into small cubes
  • Put half of the cubes and the cream into a frying pan and cook until you have a compote
  • Set aside
  • Use a rolling pin to roll out the dough on a floured countertop until it is about 1/5″ (½ cm) thick
  • Place the dough into a buttered flan dish with a removable bottom and bake in the oven for about 15 minutes
  • Take the dish out of the oven and spread the apple compote onto the dough, followed by the raw apple cubes and flaked almonds
  • Put it back into the oven and bake for 10 minutes
  • This last stage finishes off cooking the dough, cooks the small cubes of apple and browns the almonds.


While the dough is cooking, you can marinate the cubes of apple in a little Calvados.
