Easy chocolate mousse

« As the recipe name says, I believe this is the easiest recipe, and one that will yield a mousse bringing out the full flavor of the chocolate. I love having this dessert after taking a walk on a dreary fall day.  »

  • Break chocolate into small pieces in a bowl
  • Set bowl over boiling water to melt chocolate
  • Add diced butter to melted chocolate.
  • Break eggs and separate egg whites from yolks.
  • Beat egg whites until stiff
  • Remove chocolate / melted butter mixture from heat
  • Add egg yolks and mix until mixture is smooth
  • Fold stiffly beaten egg whites into chocolaty mixture with a spatula. Egg whites
  • must be added gradually and gently to keep them from deflating.
  • Pour mousse into individual bowls and store in refrigerator for 2 to 3 hours.


  • There is no dearth of suggestions. Aside from the classical coffee liqueurs, rum and other flavorings to add to mousse, I particularly recommend you add Malabar pepper. You'll be surprised how well they go together.
  • And as a garnish, a tiny fresh mint leaf or a raspberry would not be out of place. Turn your mousse into a holiday dessert by putting slivers of gold leaf on it. Don't worry, gold leaf isn't pricey and gold is a harmless metal to ingest.
