Chocolate mascarpone mousse

Ingredients

Serves 4

Preparation

  • Roughly chop the chocolate and melt it using a bain marie pan
  • Pour the egg yolks into a large bowl
  • Add the sugar and mix until you obtain a light and airy whitish cream
  • Add the rum
  • Blend in the Mascarpone and melted chocolate
  • Mix well until you obtain a homogenous mixture
  • Whip the egg whites
  • Blend the egg whites into the chocolate and mascarpone cream
  • Very gently fold the egg whites into the chocolate mascarpone mixture until blended; this careful mixing technique retains the egg white’s consistency
  • Pour the mousse into individual bowls
  • Place the bowls in the refrigerator for three hours before serving
  • Sift powdered cocoa over the top of each bowl just before serving

Suggestion

Rum can be replaced by whiskey, Marsala, or even Grand Marnier. Finally, you can decorate the mousse with a small dollop of chantilly cream or a small leaf of fresh mint.
