Chocolate-Chestnut Frozen Nougat

Ingredients

Serves 6

  • 14 oz (400 g) marrons glacés or candied chestnut pieces
  • 7 oz (200 g) bitter chocolate
  • 5 oz (150 g) butter


Custard

  • 1 cup (1/4 l) milk
  • 2 oz (50 g) finely granulated (caster) sugar
  • 4 egg yolks
  • 1 oz (30 ml) rum

  • Crumble chestnuts
  • Line a square pan or cake pan with parchment paper
  • Cut chocolate into pieces

  • Melt chocolate and butter in a mixing bowl over hot water
  • Once completely melted, mix quickly with a
  • Add chestnut crumbs and mix again
  • Pour into pan and set in refrigerator overnight
  • Make custard
  • In a bowl, mix eggs and sugar
  • In a large saucepan, bring milk to a boil
  • Stir milk into egg and sugar mixture and pour into pan
  • Cook over very low heat, stirring constantly with a wooden spoon
  • When cream coats spoon, stop cooking, pour into a cold container and add rum
  • Stir and chill, stirring often to prevent top from thickening Set aside in refrigerator
  • At serving time, turn out cake and slice thinly or cut into cubes
  • Place slices or cubes on a small plate or bowl and coat with rum cream
