Serves 8
- 1 ½ lb (700 g) cherries preserved in brandy
- 9 oz (250 g) powdered sugar
- 4 eggs
- 1 tsp lemon juice
- ¼ cup (6 cl) water
- 4 ½ oz (125 g) butter
- 7 oz (200 g) all-purpose wheat flour
- 1 ¾ oz (50 g) corn flour
- 1 tsp powdered yeast
- 1 ¾ oz (50 g) cocoa
- 2 tbsp kirsch
- 2 cups (50 cl) single cream
- 2 tbsp (25 g) icing sugar
- 1 bar baking chocolate
Preparation
Preparation of ingredients:
- One day prior to serving:
- Separate the egg whites from the yolks
- Melt the butter
- Butter the cake mold Preheat the oven to 350°F (180°C)
- Day cake is served:
- Remove the pits from the cherries, if necessary
- With a potato peeler or a grater, create chocolate shavings from the bar of baking chocolate
Preparation:
- One day prior to serving:
- In a large bowl, put the sugar and egg yolks and beat them until the mixture whitens
- Add the melted butter and mix
- Pour in the both types of flour little by little along with the yeast and cocoa while stirring continuously
- Beat the egg whites until very stiff by adding at the end the spoonful of lemon juice
- Very carefully add the egg whites to the mixture
- Pour this final mixture into the buttered mold and bake in the oven for 45 minutes
- Verify proper baking time with a knife blade: the cake should unstick from the mold easily
- Turn the cake out of the mold and allow it sit all night or all day
Day cake is served:
- Assembling the cake:
- Whisk the very cold single cream into whipped cream; add the icing sugar and whisk again
- Cut the cake horizontally into 5 thin slices
- Place the first slice on a serving tray, soak it with kirsch, place cherries on top and cover with whipped cream; add the second slice, cover with whipped cream, and finish off with another slice of cake
- Using a spatula, cover the whole cake with whipped cream; next, sprinkle with chocolate shavings and keep cool (not too long due to the whipped cream) until ready to be eaten
